About The Job

Organizational Structure

The Sommelier reports directly to the Italian Restaurants General Manager and Assistant Director of Food & Beverage.

Duties and Responsibilities

  • Ensure that the restaurant team has good knowledge of wine and food.
  • Control daily storage, aging rotation, and temperature of all stock in the beverage storeroom; report any issues.
  • Maintain cleanliness and accuracy of wine lists, updating with correct vintages and out-of-stock items.
  • Monitor service bar operations (main service bar and restaurant bar).
  • Liaise with the Purchasing Manager to ensure efficient ordering and stock levels, reviewing procedures seasonally.
  • Perform additional duties as required by the Director of Food & Beverage.

Human Resources/Colleagues

  • Supervise F&B service, guiding colleagues and providing feedback.
  • Identify and facilitate training and development needs.

Financials

  • Maintain accurate wine sales records for analysis and incentives.
  • Engage in suggestive selling and up-selling.
  • Organize wine promotions during quieter periods.

Maintaining Standards

  • Support the company's philosophy and culture through Legendary Quality Experiences to ensure guest satisfaction.

Guest Service

  • Remember and record guest wine preferences.
  • Be on duty during service, recommending wines to complement food and guest preferences.
  • Handle guest complaints about wine according to MO standards.

Hygiene and Cleanliness

  • Maintain grooming and hygiene standards to project professionalism.

Health and Safety

  • Comply with safe working practices, local food hygiene standards, and hotel safety procedures.
