Responsibilities
  • Assist the Chef de Partie with daily tasks and oversee responsibilities during their absence.
  • Wash and peel ingredients for dish preparation.
  • Prepare mise en place to the highest standards.
  • Follow plating guides for presentation and dish descriptions.
  • Organize requisitions and storage efficiently.
  • Check inventory levels before each shift to ensure stock availability.
  • Store ingredients properly, ensuring preservation and correct labeling.
  • Maintain cleanliness and sanitation of work surfaces, tools, and utensils according to food safety standards.
  • Adhere to personal hygiene standards rigorously.
  • Support cleanliness and maintenance of the kitchen and stewarding areas, including daily checks.
  • Follow food safety standards set by Mandarin Oriental and local regulations.
  • Ensure customer satisfaction aligned with MOHG's Quality Experiences and service standards.
  • Collaborate with team members and assist other outlets or banquet services as needed.
  • Attend meetings and training sessions as scheduled.
  • Perform additional duties as assigned by superiors, including support in other kitchen areas.
