Sushi Chef

We are seeking an experienced sushi chef to prepare high-quality sushi dishes and ensure exceptional service standards.

Duties:

• Chef Duties: Prepare various food items for cooking in broilers, ovens, grills, fryers, and other kitchen equipment.
• Quality Control: Assume 100% responsibility for the quality of products served.
• Inventory Management: Check incoming produce, ensuring all food merchandise is in accordance with order sheets, receiving records, and purchasing specifications.
• Cooking Techniques: Knows and consistently complies with standard portion sizes, cooking methods, quality standards, and kitchen rules and guidelines.
• Plate Presentation: Follows proper plate presentation and garnish set up for all dishes.
• Guest Feedback: Records guest complaints, requests, and solutions, and reports them to the Executive Chef or Executive Sous Chef.
• Health and Safety: Has a complete understanding of and adheres to the policy relating to fire, hygiene, and safety.
• Maintenance: Ensures all equipment and working area are kept clean and in good working condition.
• Service Standards: Upholds guidelines and standards of service and operation, exceeding performance benchmarks.

Qualifications:

• A minimum of 2-4 years' experience as a sushi chef de partie in a luxury hotel or similar setting.
• Chef Qualifications: High school diploma or equivalent, knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of farm-to-table concept.
• Certifications: Alcohol awareness certification, food service permit, or valid health/food handler card as required by local or state government agency.
• Leadership Skills: Able to thrive in multicultural teams and has strong leadership skills.
• Cuisine Specialization: Specialized in fast-paced A la carte operations and has sound knowledge of Mediterranean cuisine.
• Sectional Experience: Experience working in cold, hot, pasta, and grill sections of the kitchen.
• Linguistic Ability: Excellent command of written and spoken English.
