Job Title: Senior Kitchen Operations Manager

The successful candidate will be responsible for overseeing the preparation and presentation of menu items for all event orders, ensuring that they meet the required standards of quality and hygiene.

Main Responsibilities:

  • To coordinate with the stewarding staff to maintain a clean and hygienic work environment at all times.
  • Supervise junior staff to ensure that they are working efficiently and effectively.
  • Prepare mise-en-place for all items needed for events, including checking all event orders and preparing food in a presentable manner.
  • Work closely with the butcher to ensure that the correct ingredients are available for buffet preparations.
  • Co-ordinate with other departments to ensure seamless service delivery.
  • Assist in briefing staff on new procedures and policies to improve working methods.
  • Carry out any additional duties as requested by the department head.
  • Maintain a spirit of cooperation among staff members.
  • Report for duty on time, wearing the correct uniform and name badge, and sign the attendance record at the beginning and end of each shift.
  • Train, develop, guide, and motivate colleagues.
  • Assist other departments when required.
  • Attend departmental meetings and training sessions, and operate in line with instructions received.
  • Maintain a clean and tidy workspace.
  • Be aware of hotel activities and promote sales opportunities.
  • Suggest ways to reduce costs without affecting quality and standard.
  • Ensure energy and water conservation.
  • Report maintenance defects to the engineering department.
  • Operate equipment according to guidelines.
  • Have full knowledge of hotel safety and emergency procedures.
  • Comply with statutory and legal requirements for fire, health, and safety, hygiene, licensing, and employment.
  • Be aware of local customs.
  • Adhere to hotel rules at all times.
  • Support the hotel's environmental initiatives.

Qualifications:

  • Minimum 4-5 years of experience in a hotel or fine dining kitchen.
  • Expertise in a particular cuisine (hot/cold/kitchen).
  • Knowledge of food safety and hygiene standards.
  • Ability to work under pressure and lead junior staff.
  • High school diploma; culinary certificate preferred.
