Lead Baker

We seek a skilled Culinary Professional to fill the position of Baker in our esteemed hotel.

The successful candidate will be responsible for preparing and serving a variety of high-quality baked goods, including artisan breads, rolls, croissants, muffins, doughs, and specialty items that meet our hotel's standards.

Key responsibilities include:

• Preparing a range of baked products such as artisan breads, rolls, croissants, muffins, doughs, and specialty items.
• E nsuring all baked products meet our quality and presentation standards.
• Monitoring baking processes and adjusting time and temperature controls to ensure proper baking.
• Assisting in developing and testing new recipes in collaboration with the Pastry Chef or Executive Chef.
• Supervising Commis Bakers and providing on-the-job training and support.
• Maintaining cleanliness and organization of the bakery section, ensuring compliance with food safety and hygiene standards.
• Ensuring mise-en-place is prepared and ready for daily operations.
• Monitoring inventory levels, assisting in placing bakery-related orders, and minimizing waste.
• Labeling and storing baked products correctly, adhering to FIFO (First In, First Out) practices.
• Communicating effectively with kitchen and service staff to ensure smooth operation and timely service.

To be successful in this role, you will require:

• Diploma or certification in Bakery, Culinary Arts, or related field.
• Minimum 2–4 years of bakery experience in a professional kitchen or hotel bakery environment.
• Strong understanding of baking techniques, fermentation, proofing, and ingredient functionality.
• Knowledge of food safety standards and HACCP guidelines.
• Ability to work early mornings and maintain punctuality.
• Good communication skills and the ability to work as part of a team.
