Job Title: Meat Preparation Specialist

We are seeking a detail-oriented and hardworking individual to join our team as a Meat Preparation Specialist. The successful candidate will be responsible for the preparation, portioning, and storage of all meat, poultry, and seafood products in our kitchen.

Key Responsibilities:
  • Assist in receiving, inspecting, and properly storing all meat, poultry, and seafood deliveries.
  • Support the butchery team in trimming, cutting, portioning, and preparing meats for various dishes and service requirements.
  • Maintain cleanliness and organization of the butchery section, ensuring all surfaces, equipment, and tools are sanitized and properly stored.
  • Label, date, and store meat products according to food safety standards and ensure proper stock rotation (FIFO).
  • Prepare mise-en-place for butchery as per daily kitchen needs and banquet/event orders.
  • Operate butchery equipment safely and under supervision (e.g., meat slicers, grinders, band saws).
  • Assist with minimizing waste by using proper cutting and portioning techniques.
  • Follow all hygiene, sanitation, and safety standards (e.g., HACCP protocols).
  • Report any quality issues or shortages to the Chef de Partie or Sous Chef.
Requirements:
  • High school diploma or equivalent required.
  • Basic culinary education or butchery training from a recognized institution preferred.
  • Previous kitchen or butchery experience is a plus but not mandatory.
  • Knowledge of different meat cuts, trimming techniques, and handling procedures is an advantage.
  • Physically fit and able to handle raw meat, lift heavy loads, and work in cold storage environments.
  • Good knife skills and basic understanding of portion control.
  • Willingness to learn and take direction from senior chefs.
  • Flexible with shifts, including early mornings, weekends, and holidays.
