Duties and Responsibilities

As Commis, I will assume full responsibility for efficient operation in the following areas:

  1. Carries out daily and weekly procedures, including temperature checks, food labelling/dating, and storage.
  2. Produces all required food items to standard and in a timely manner within the assigned section.
  3. Knows and complies consistently with standard portion sizes, cooking methods, quality standards, and kitchen rules and guidelines.
  4. Follows proper plate presentation and garnish setup for all dishes.
  5. Has a complete understanding of and adheres to Six Senses' policies relating to fire, hygiene, and safety.
  6. Ensures all equipment and work areas are kept clean and in good working condition.
  7. Upkeeps Six Senses guidelines and standards of service and operation, maintaining and exceeding performance benchmarks.
  8. Strictly adheres to LQA standards and guest comments.
Qualifications

To execute the position of Commis, I must have the required qualifications, technical skills, and experience in a similar role within luxury hotels, with proven results. These include:

  • High school diploma or equivalent, with 1-3 years of kitchen experience in a full-service outlet or similar setting. A hospitality diploma/degree from a recognized institution is preferred.
  • Knowledge of broiler equipment, understanding of meat and fish cookery, proficient knife skills, and understanding of the farm-to-table concept.
  • Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state regulations.
  • Excellent command of written and spoken English, ability to live in a remote location for extended periods, and willingness to travel on a single status.
