The Chef de Partie – Baker is responsible for preparing high-quality baked goods including bread, rolls, breakfast pastries, and other baked items as part of the hotel's culinary offerings. This role involves overseeing daily bakery production, ensuring consistent quality, and maintaining hygiene standards in the bakery section. The Baker will also assist in menu planning, inventory control, and training of junior staff.

YOUR DAY-TO-DAY:

  • Prepare a variety of baked goods such as artisan breads, rolls, croissants, muffins, doughs, and specialty items.
  • Ensure all baked products meet hotel quality and presentation standards.
  • Monitor baking processes and adjust time and temperature controls to ensure proper baking.
  • Assist in developing and testing new recipes in collaboration with the Pastry Chef or Executive Chef.
  • Supervise Commis Bakers and provide on-the-job training and support.
  • Maintain cleanliness and organization of the bakery section, ensuring compliance with food safety and hygiene standards.
  • Ensure mise-en-place is prepared and ready for daily operations.
  • Monitor inventory levels, assist in placing bakery-related orders, and minimize waste.
  • Label and store baked products correctly, adhering to FIFO (First In, First Out) practices.
  • Communicate effectively with kitchen and service staff to ensure smooth operation and timely service.

WHAT WE NEED FROM YOU:
  • Diploma or certification in Bakery, Culinary Arts, or related field.
  • Minimum 2–4 years of bakery experience in a professional kitchen or hotel bakery environment.
  • Strong understanding of baking techniques, fermentation, proofing, and ingredient functionality.
  • Knowledge of food safety standards and HACCP guidelines.
  • Ability to work early mornings and maintain punctuality.
  • Good communication skills and the ability to work as part of a team.
