Job Title: Master Meat Specialist

We are seeking a highly skilled and detail-oriented Master Meat Specialist to join our culinary team. As a key member of our kitchen, you will be responsible for the efficient operation of our meat department.

Your primary focus will be on rejuvenating the culinary experience by ensuring that every aspect of our meat service is exceptional. This includes separating primal cuts from carcasses, trimming, cutting, and boning efficiently into retail cuts. You will also maintain proper portion control when butchering retail cuts into portions.

In addition to your technical skills, you will be expected to establish purchasing practices aligned with our nutrition and sustainability standards. This will involve promoting a cost-focused approach through training and education, as well as operating in compliance with legal, statutory, and financial requirements.

You will also be responsible for strictly adhering to quality assurance standards and guest feedback. Your role will be crucial in ensuring that every guest has a memorable dining experience.

• Bachelor's degree or equivalent in hospitality or a related field; high school diploma or equivalent with at least 3 years of kitchen experience in a full-service setting preferred.
• Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of farm-to-table concepts.
• Alcohol awareness certification and/or food service permit or valid health/food handler card as required locally.
• Excellent command of written and spoken English, with the ability to live in remote locations for extended periods and travel on single status.
