Key Responsibilities
  • Foster a culture of continuous improvement in culinary experiences.
  • Effectively separate primal cuts from carcasses, trim, cut, and bone into required retail cuts.
  • Maintain precise portion control when butchering retail cuts into portions.
  • Establish purchasing practices aligned with our nutrition and sustainability platforms.
  • Promote a cost-focused philosophy through training and education.
  • Ensure operational excellence within the department, adhering to legal, statutory, and financial requirements, including documentation, reporting systems, contractual obligations, security, safety protocols, communication standards, product and service standards, and host management practices.
Requirements

To succeed in this role, I should possess the following qualifications, skills, and experience:

  • A high school diploma or equivalent, with at least 3 years of kitchen experience in a full-service outlet or similar setting. A hospitality diploma/degree from a recognized hospitality school is preferred.
  • Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of the farm-to-table concept.
  • Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state regulations.
  • Excellent command of written and spoken English, with the ability to work in a remote location for extended periods and travel on single status.
