Job Title: Senior Cost Management Specialist

- Conduct monthly inventory checks for all stores and perform spot checks on Food & Beverage outlets, Spa, and Boutique to ensure compliance with company policies.">
- Verify that all merchandise is stored securely in locked storage areas and monitor key security.">
- Maintain clean, organized, and secure storage areas in line with MOHG health and safety requirements.">
- Evaluate the proper issuance of F&B and non-F&B items from the stores.">
- Establish and maintain cost allocation transfer systems for F&B and accurately post interdepartmental transfers between cost centers.">
- Compare quoted prices to invoice prices and verify invoices on a selective basis.">
- Monitor inventory levels, establishing par stocks for inventoried items while minimizing stock without compromising hotel efficiency.">
- Create and update recipes, linking Point of Sale (POS) System to Purchasing System for generating monthly potential food and beverage costs of sales.">
- Prepare monthly F&B cost reports and month-end reconciliation reports.">
- Prepare assigned monthly Balance Sheet reconciliations.">
- Conduct regular spot checks on procedures for purchasing, receiving, storing, and issuing.">
- Conduct regular spot checks on beverage par stocks for Stores and Outlets.">
- Verify menu costing for Food & Beverage and compare it with pricing policy.">
- Implement and manage F&B menu engineering.">
- Regularly inspect store items for expiry and freshness.">
- Prepare Daily Flash Food Report.">
- Attend banquets to control stocks and perform spot checks as needed.">
- Reduce spoilage by monitoring and improving stock movement.">
- Highlight potential challenges or opportunities to improve profitability to management.">
- Provide training to F&B team members with system service provider assistance.">
- Maintain close working relationships with Director of F&B, Executive Chef, and other departments, informing them of any potential problems or opportunities to improve controls in their areas.">
- Collaborate with Executive Chef to track high-cost items in the food area.">
- Work with Food and Beverage Manager to develop menu pricing for food and beverage products.">
- Develop and enhance purchasing and cost control policies and procedures.">
- Document all received items according to company purchasing and receiving procedures.">
- Maintain sufficient supplies for each department by coordinating regular inventories with Stores.">
- Assist Accounts Payable in researching discrepancies on invoices.">
