Job Title: Senior Culinary Specialist

Job Description:

The Senior Culinary Specialist is responsible for the preparation and presentation of menu items in accordance with hotel standards.

  • To prepare mise-en-place for all event orders and to supervise staff to maintain high standards of service.
  • Prepare food for buffets in an aesthetically pleasing manner and work closely with stewarding staff to ensure cleanliness and hygiene throughout the kitchen area.
  • Coordinate with butchers to obtain necessary ingredients for buffets, functions, etc. and double-check all areas of responsibility to ensure everything is done properly.

Main Duties & Responsibilities:

  • Assist in briefing staff to improve working methods and carry out any reasonable duties as may be requested by the department head.
  • Maintain a spirit of co-operation among staff, report for duty on time, clean and tidy, wearing the correct uniform and name badge, and ensure attendance records are signed both at the beginning and end of each shift.
  • Train, develop, guide, and motivate colleagues, assist other departments when required, and attend departmental communication meetings and training sessions.
  • Be aware of hotel activities/events to promote and maximize sales, suggest ways to reduce costs without affecting quality and standard, and ensure energy and water savings.
  • Report maintenance defects to supervisors or engineering department, operate equipment according to guidelines, have full knowledge of hotel safety and emergency procedures, comply with statutory and legal requirements, and be aware of local customs.
  • Adhere to hotel rules at all times and support environmental projects.

Qualifications:

  • Minimum 3-4 years' experience in a hotel or fine-dining kitchen environment.
  • Expertise in a particular cuisine (hot/cold/kitchen).
  • Knowledge of food safety and hygiene standards.
  • Ability to work under pressure and lead junior staff.
  • High school diploma; culinary certificate preferred.
