Job Description

As a skilled butcher, you will play a vital role in the culinary team by focusing on rejuvenating the dining experience through efficient and high-quality meat preparation. Your responsibilities will include:

  • Separating primal cuts from carcasses, trimming, cutting, and boning into retail cuts.
  • Maintaining proper portion control when butchering retail cuts into portions.
  • Establishing purchasing practices aligned with the company's nutrition and sustainability standards.
  • Promoting a cost-focused approach through training and education.
  • Operating in compliance with legal, statutory, and financial requirements, including documentation, reporting, contractual obligations, security, safety protocols, communication standards, product and service standards, host management practices, and budget controls.
  • Safeguarding the pillars of sustainability, wellness, and extraordinary experiences that are at the core of the company's mission.

The ideal candidate for this position should possess the following qualifications, skills, and experience in a similar role within luxury hotels:

  • A high school diploma or equivalent, with at least 3 years of kitchen experience in a full-service setting. A hospitality diploma or degree from a recognized institution is preferred.
  • Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of farm-to-table concepts.
  • Alcohol awareness certification and/or food service permit or valid health/food handler card as required locally.
  • Excellent command of written and spoken English, with the ability to live in remote locations for extended periods and travel on single status.
