Job SummaryThe Executive Chef is responsible for overseeing the kitchen operation, food production and related areas.
- Develop unique menus tailored to local cuisine.
- Collaborate with the Food & Beverage Manager to set menu prices.
- Stay up-to-date on hospitality industry trends.
- Monitor inventory and purchasing from approved suppliers.
- Implement efficient payroll management and resource allocation by adopting multi-skilling and multi-tasking principles.
- Guide kitchen staff in meal preparation, presentation and delivery.
- Evaluate performance standards for Stewarding and Kitchen to achieve high hygiene standards, minimize equipment breakage and optimize resource flow.
- Ensure compliance with health, safety and hygiene regulations in accordance with HACCP standards.
- Introduce new culinary techniques.
This position requires a professional kitchen apprenticeship or chef's training course and at least 7 years of experience in quality establishments in a similar role. Strong English communication skills and a proven track record in food preparation, presentation and preservation are essential.
Familiarity with the HACCP management system and administration work is also required. Prior experience with Futurelog and food waste management would be beneficial. A Bachelor's Degree and/or Hotel Management degree is preferred. Excellent written and verbal communication skills are necessary for success in this role.
