
Executive Culinary Team Member

We are seeking a skilled Chef de Partie to join our culinary team. As a key member of the kitchen staff, you will be responsible for preparing and presenting dishes that meet the highest standards of quality and presentation.
The successful candidate will have previous experience in a similar role and possess excellent cooking skills, attention to detail and strong communication abilities.
About the Role- Work closely with the Chef de Cuisine to create menus and lead promotional events.
- Develop and maintain plating guides to ensure consistency across all dishes.
- Ensure that food is prepared in accordance with set standards and presented in an appealing manner.
- Identify areas for improvement in food and beverage quality and report to the Chef de Cuisine.
- Support inter-departmental communication to promote teamwork and enthusiasm.
- Order and request ingredients daily, maintaining inventory levels and minimizing waste.
- Provide leadership, direction and support to colleagues at all times.
- Assist the Chef de Cuisine in preparing weekly rosters.
- Oversee food safety standards, ensuring compliance with local regulations and hotel policies.
- Maintain the cleanliness and organization of the kitchen, adhering to health and safety guidelines.
- Supervise the preparation and display of Essenza cuisine, adhering to set standards.
- Implement and maintain grooming and appearance standards, reflecting professionalism and care.
- Monitor VIP guest requirements and special dietary needs, ensuring exceptional customer satisfaction.
- Communicate rules and regulations to colleagues, using the Colleague Handbook and other relevant documents.
- Conduct counseling and disciplinary actions as necessary, adhering to hotel procedures.
- Attend daily and weekly meetings with the team.
- Conduct regular dish training to ensure up-to-date knowledge and cooking methods.
- Share specialty cuisine knowledge and recipes with related colleagues.
- Oversee overall food safety administration for the Essenza restaurant.
- Follow Jardine audit requirements for the culinary department.
- Assist the Chef de Cuisine in administrative matters for the outlet.
- Support other kitchen teams as required.
