The Sous Chef – Pastry is the second-in-command in the pastry department and plays a crucial role in assisting the Executive Pastry Chef with the overall pastry operation. This includes overseeing daily production, supervising junior pastry staff, maintaining high standards of quality, and ensuring smooth kitchen operations. The Sous Chef – Pastry helps in developing new desserts, managing inventory, and ensuring compliance with hygiene and safety standards.
YOUR DAY-TO-DAY:- Assist the Executive Pastry Chef in planning and directing all pastry and dessert preparation.
- Supervise and support the pastry team, including Chef de Partie, Demi Chef, and Commis Chefs.
- Ensure the consistent preparation and presentation of high-quality pastries, desserts, and baked goods.
- Contribute to menu development and testing of new recipes and seasonal offerings.
- Ensure that all dishes are prepared to meet food hygiene and quality standards.
- Maintain cleanliness and organization of the pastry kitchen and storage areas.
- Manage inventory, ordering, and proper storage of ingredients and supplies.
- Monitor portion control, waste reduction, and cost-efficiency practices.
- Train, mentor, and evaluate junior pastry staff.
- Coordinate with other departments (e.g., banquet, à la carte, events) to meet pastry and dessert needs.
- Proven experience as a Senior Pastry Chef, Pastry Sous Chef, or equivalent.
- Professional culinary or pastry degree/diploma.
- Deep knowledge of classic and modern pastry techniques.
- Strong leadership and team management skills.
- High attention to detail, creativity, and a passion for pastry arts.
- Excellent understanding of food safety and hygiene regulations (HACCP).
- Ability to work under pressure and meet deadlines.
