Key Responsibilities
  • Oversee all operational and administrative aspects of the culinary division, prioritizing engagement based on business needs.
  • Monitor industry trends; collaborate on culinary research and development.
  • Develop and implement policies, standards, and procedures related to food and beverage operations, including menu design, sanitation, and cost control.
  • Support and guide the culinary team to adhere to company standards and systems.
  • Create and maintain standards, processes, and tools for consistent culinary quality.
  • Lead from development through implementation, fostering teamwork and enthusiasm.
  • Train, evaluate, and schedule culinary staff according to standards and business needs.
  • Support the Chief Steward in maintaining cleanliness, safety, and equipment standards.
  • Ensure compliance with food safety standards and local regulations.
  • Collaborate with outlet managers and chefs to plan menus, pricing, and promotions.
  • Identify areas for improvement in food and beverage quality and develop action plans.
  • Work with Materials Management to source required products.
  • Maintain professional grooming and appearance standards.
  • Oversee equipment maintenance and security.
  • Plan resources effectively based on business forecasts.
  • Ensure plating and presentation standards are followed and updated.
  • Focus on customer satisfaction, creating memorable guest experiences.
  • Engage with guests for menu planning and special requirements.
  • Motivate the team to deliver exceptional service and create "WOW" moments.
  • Conduct regular meetings, coaching, and disciplinary actions as needed.
  • Monitor and control food, labor, and consumable costs; prepare staff rosters.
  • Manage menu creation, recipe costing, and financial analysis.
  • Stay updated on food trends; conduct dish training; plan promotional activities.
  • Participate in scheduled meetings and perform other duties as required.
