Meat Preparation Specialist Opportunity

This role presents an exciting chance to be part of a dynamic team in our kitchen. As a Meat Preparation Specialist, you will play a key role in ensuring the quality and presentation of meat products are consistently high.

Key Responsibilities:

  • Assist in receiving and storing meat deliveries, inspecting for quality and freshness.
  • Support the butchery team in cutting, portioning, and preparing meats for various dishes and service requirements.
  • Maintain cleanliness and organization of the butchery section, adhering to strict food safety standards.
  • Label and store meat products according to HACCP protocols and ensure proper stock rotation.
  • Prepare mise-en-place for butchery as per daily kitchen needs and banquet/event orders.
  • Operate butchery equipment safely and under supervision, following manufacturer guidelines.
  • Minimize waste by using efficient cutting and portioning techniques.
  • Report any quality issues or shortages to senior chefs.
  • Collaborate with other sections of the kitchen as needed, maintaining flexibility and teamwork.

Required Skills and Qualifications

  • High school diploma or equivalent required.
  • Basic culinary education or butchery training from a recognized institution preferred.
  • Previous kitchen or butchery experience is beneficial but not essential.
  • Knowledge of different meat cuts, trimming techniques, and handling procedures advantageous.
  • Physical fitness to handle raw meat, lift heavy loads, and work in cold storage environments.
  • Good knife skills and basic understanding of portion control.
  • Ability to take direction from senior chefs and adapt to changing priorities.
