Job Title: Senior Meat Cuttings Specialist

Job Description:

As a Senior Meat Cuttings Specialist, you will be responsible for maintaining the highest standards of culinary excellence in our kitchen. Your primary focus will be on rejuvenating the culinary experience by continuously improving meat cutting techniques and presentation.

Key Responsibilities include:

  • Separate primal cuts from carcasses, trim, cut, and bone efficiently into required retail cuts.
  • Maintain proper portion control when butchering retail cuts into portions.

Additionally, you will establish purchasing practices aligned with our nutrition and sustainability platforms and promote a cost-focused philosophy through training and education.

The ideal candidate will have at least 3 years of kitchen experience in a full-service outlet or similar setting. A hospitality diploma/degree from a recognized hospitality school is preferred.

Required Skills and Qualifications:
  • High school diploma or equivalent.
  • Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of the farm-to-table concept.
  • Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local regulations.
