Job Description

We are seeking an Executive Chef who will oversee the smooth operation of the entire kitchen operation, including food production and related sections. Key responsibilities include:

  1. Developing unique and cuisine-appropriate menus that cater to diverse tastes and preferences.
  2. Collaborating with the Food & Beverage Manager to set item prices based on market trends and customer demand.
  3. Staying current on developing trends in the hospitality industry to ensure our culinary offerings remain competitive.
  4. Monitoring inventory and purchasing supplies and food from approved vendors to maintain high-quality standards.
  5. Coordinating an effective and efficient Payroll Management / Resource allocation by establishing a flexible workforce throughout the Division, based on the principles of multi-skilling and multi-tasking.
  6. Assisting and directing kitchen staff in meal preparation, creation, plating, and delivery to meet the highest possible standards.
  7. Establishing, implementing, and controlling performance standards for the Stewarding in Kitchen and Food & Beverage to achieve optimal hygiene, minimize equipment breakage, and streamline resource flows.
  8. Ensuring compliance with health, hygiene, and safety regulations as per HACCP standards and procedures.
  9. Identifying and introducing new culinary techniques to enhance menu offerings and guest experiences.
  10. Preparing meals and completing prep support as needed to meet peak demands.

Qualifications

  1. A professional kitchen apprenticeship or chef's training course, combined with at least 7 years of experience in quality establishments in a similar role.
  2. The ability to communicate well in English and a proven track record of food preparation, presentation, and preservation knowledge is essential.
  3. A strong knowledge of the HACCP management system and administration work is required.
  4. Prior experience with Futurelog & food waste management system would be beneficial for a seamless transition into the role.
  5. A Bachelor's Degree and/or Hotel Management degree is preferred.
  6. Excellent written and verbal communication skills are mandatory.
