We are seeking a passionate and experienced leader to oversee all aspects of baking operations.

Responsibilities:
  • Embody Shangri-La's hospitality philosophy and core values, demonstrating genuine care and politeness towards guests and colleagues.
  • Maintain professionalism, punctuality, and a harmonious attitude within the team.
  • Stay informed about hotel updates and guest preferences, ensuring efficient bakery operations and high standards of food quality and sanitation.
  • Communicate effectively across all levels of staff, monitoring staff uniforms and grooming.
  • Approve staff schedules to ensure proper coverage, supporting recruitment and ongoing training in coordination with HR.
  • Oversee third-party services such as cleaning and waste management, conducting regular stock checks and safe use of equipment.
  • Provide performance appraisals and foster inter-departmental cooperation, adhering to hygiene and sanitation procedures as directed by the Hygiene Manager.
  • Ensure compliance with food safety standards, promoting waste reduction, recycling, and reuse in line with hotel and ISO standards.
  • Practice environmentally responsible procedures following hotel guidelines, monitoring food costs against budget and maintaining cost-conscious operations.
  • Train staff on waste minimization and requisition control based on business forecasts, overseeing EMS procedures in kitchen operations to meet performance targets.

This role requires creativity, efficiency, and attention to detail to deliver exceptional bakery products and guest experiences.
