About the Job

The Pastry Chef assumes full responsibility for all operational, administrative, and financial aspects of the main pastry and bakery production kitchens. This includes banquets, in-room dining, Mandarin cake shop, and lounges.

Key duties include ensuring strong coordination between outlets and main production pastry/bakery kitchens for smooth operations and efficiency. Collaboration with restaurant managers and executive chef on menu planning, pricing, promotions, and seasonal updates is also essential.

A high standard of recipe accuracy, presentation, and authentic preparation per executive chef guidelines must be maintained. Ingredient quality and recipe consistency are monitored, and support for POS accuracy and menu setup is provided.

Reviewing guest feedback and audit reports drives food quality improvements in coordination with restaurant managers. The team is led, trained, and scheduled effectively to ensure alignment with labor budgets and business volume.

Better teamwork, open communication, and a culture of WOW guest moments are fostered in collaboration with restaurant managers. Team performance is managed, disciplinary actions taken, and accurate leave and public holiday records maintained.

Recipe costings are kept updated and aligned with selling prices. Support is given for inventory and market list management. Analysis of P&L, food costs, and menu performance applies improvements as needed.

Festive or promotional event planning stays current with global pastry trends. Other duties assigned by the executive chef are performed.
