Sustainable Culinary Expert

Job Description

We are seeking a highly skilled and motivated Sustainable Culinary Expert to join our team. As a key member of our culinary department, you will play a crucial role in rejuvenating the culinary experience and driving sustainability initiatives.

Your primary responsibility will be to maintain high standards of quality, safety, and efficiency in food preparation and presentation. You will also be responsible for implementing sustainable practices, sourcing locally, and promoting cost-focused philosophies.

You will work closely with our kitchen team to ensure seamless operations, adhering to all legal, statutory, and financial requirements. Your attention to detail and commitment to excellence will be essential in delivering exceptional guest experiences.

Key Responsibilities
  • Maintain efficient butchery processes, including primal cuts separation, trimming, cutting, and boning into required retail cuts.
  • Implement portion control strategies to minimize waste and optimize costs.
  • Develop and maintain purchasing practices aligned with our nutrition and sustainability platforms.
  • Collaborate with the kitchen team to promote cost-focused philosophies through training and education.
  • Ensure compliance with all legal, statutory, and financial requirements, including documentation, reporting systems, contractual obligations, security, safety protocols, communication standards, product and service standards, host management practices, and budget controls.
Requirements

To succeed as a Sustainable Culinary Expert, you should possess:

  • A minimum of 3 years of kitchen experience in a full-service outlet or similar setting.
  • Demonstrated knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of the farm-to-table concept.
  • Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state regulations.
  • Excellent command of written and spoken English, with the ability to communicate effectively with colleagues and guests.
