Job Summary

The Hotel Butcher is a crucial member of the kitchen team, accountable for preparing and managing meat, poultry, and seafood items according to established standards and guidelines.

Key Responsibilities:
  • Cut, trim, bone, tie, and grind meats and poultry as per specifications and production requirements.
  • Prepare fish and seafood by cleaning, scaling, filleting, and portioning according to needs.
  • Ensure correct storage, labeling, and rotation of meat and seafood items adhering to FIFO and HACCP principles.
  • Maintain cleanliness and organization of the butchery area, tools, and equipment.
  • Monitor inventory levels of meat and seafood, report shortages, and assist in ordering as required.
  • Minimize waste through proper handling and portioning practices.
  • Coordinate with other kitchen sections to ensure timely delivery of prepared meat items.
  • Follow standard recipes and portion sizes, and ensure consistency in product quality and yield.
  • Assist in receiving deliveries, checking quality, and temperature of meat and seafood products.
