Bali Jobs Recruitment is seeking a highly skilled Fine Dining Director to join our team at an ultra-luxury resort. As a leader in the hospitality industry, we strive for excellence in every aspect of our services.

The ideal candidate will oversee the restaurant and beverage experience, ensuring that menus, wine lists, and amenities remain relevant while aligning with wellness and sustainability practices. This role involves collaborating with various departments to anticipate guest needs, uphold service standards, and enhance overall dining experiences.

**Key Responsibilities:**

  • Ensure all established policies, procedures, and best practices are in place and strictly enforced.
  • Support the Director of Food & Beverage in enhancing the restaurant and culinary experience.
  • Continuously assess Food & Beverage amenities, menus, and wine lists to ensure relevance and alignment with wellness and sustainability practices.
  • Collaborate with Guest Services, Reservations, and Front Office to anticipate and fulfill guest needs.

**Requirements:**

  • A high school diploma or equivalent, with 1-3 years of restaurant management experience in a full-service outlet or a similar setting.
  • 3+ years of demonstrated sommelier experience.
  • A Hospitality Management Degree or some college education is preferred.
  • Any equivalent combination of experience and training that provides the required knowledge, skills, and abilities is acceptable.
  • Strong proficiency in written and spoken English, along with the ability to reside in a remote location for extended periods and travel on a single status basis.
  • Experience with wine lists that cover all the regions: USA, France, Spain, Italy, Germany, Chile, New Zealand, and Australia.
  • Microsoft Office application literacy and exposure to cross-cultural work environments.
  • Knowledge and experience in the purchasing and production process and is equally versed in global distribution.
  • A second spoken language would be preferred; fluency in multiple languages, such as English, Russian, French, Spanish, or German, would be highly beneficial for communicating with diverse clientele.
