Job Summary

We are seeking a skilled Culinary Butcher to join our team. The successful candidate will be responsible for preparing, portioning, and storing all meats, poultry, and seafood items.

Duties and Responsibilities
  • Cutting, trimming, deboning, and portioning meats (beef, lamb, pork, poultry) and seafood according to kitchen specifications.
  • Preparing marinated or pre-seasoned items based on menu or banquet needs.
  • Maintaining consistency in cuts and portion sizes for service and mise en place.
  • Monitoring and managing inventory levels of raw meat and fish products.
  • Receiving, inspecting, and properly storing all protein deliveries, ensuring quality and freshness.
  • Maintaining proper rotation (FIFO) and labeling of all stored items.
  • Ensuring strict adherence to hygiene and sanitation standards (HACCP or local food safety guidelines).
  • Maintaining cleanliness and organization in the butchery room, storage coolers, and equipment.
  • Coordinating with other kitchen sections to ensure timely delivery of prepared proteins.

Requirements

  • Culinary certification or vocational training, preferably with a focus on butchery.
  • 2–5 years in a professional kitchen or butchery, including experience with various meat and seafood cuts.
  • Expert knife skills, knowledge of meat grading and portioning, attention to detail, and understanding of food safety protocols.
